Brewer’s comment: American style IPA with a bitter taste and long hoppy finish. It is meant for the drinker that appreciates full flavours and a higher bitterness that is fashionable these days. Fermentation takes an average of 4-5 days with classic American US-05 yeast. Fermentation is closely monitored and around 24 hours before fermentation is finished, the brew is gently dry hopped with pellets of Cascade and Chinook. To enhance the flavours it is then cooled to 5 degrees celsius where the yeast becomes inactive and drops to the bottom of the fermentation vessel. After a further 2 days of maturing and clearing, the final beer is racked to casks or sent for bottling.
Malt: Simple combination of Maris Otter, torrified wheat and Crystal malts.
Hops: An all-American combination of Cascade and Chinook balanced with Wilamette. Pellets of Cascade and Chinook are used for dry hopping.
Colour: A clean amber that you would expect from IPA.
Nose: Sweet and hoppy aromas resembling tropical fruits such as mango and passion fruit.
Taste: Strong, bitter IPA. Sweet ripped tropical fruits such as Passionfruit, mango and grapefruit. Long bitter finish that stays on pallet.
Legend has it, NASA engineers coined the phrase “A-OK” for radio transmission tests as the sharper sound of “A” cut through the static better than “O”. This seems a fitting story to accompany our fresh, full flavoured tribute to modern American IPAs. The addition of US hops give this A-OK IPA a tropical fruit explosion with a sharp, bitter finish that should cut through the most static of palates.
